Traditional Glamorgan Sausages
Serves: 4 | Preparation: 15 minutes | Cook Time: 10 minutes

Ingredients
200g (7oz) Black Bomber Snowdonia cheese, grated
2 medium leeks, finely chopped
150g (5oz) breadcrumbs (preferably from day-old bread)
1 egg, beaten
1 tablespoon fresh parsley, chopped
Salt and black pepper, to taste
1-2 tablespoons Forage Rapeseed Oil
A little flour (for dusting)
2 tablespoons Calon Lan Wholegrain Mustard
Method
1. Heat a little oil in a frying pan over medium heat. Add the chopped leeks and sauté for about 5-7 minutes, or until they’re soft and slightly golden. Allow them to cool for a few minutes after cooking.
2. In a large mixing bowl, combine the grated cheddar cheese, cooked leeks, mustard, breadcrumbs, beaten egg, parsley. Stir everything together until well combined. Season generously with salt and black pepper to taste.
3. Lightly flour your hands and divide the mixture into 6-8 portions. Roll each portion into a sausage shape. If the mixture is too sticky, dust your hands with a more flour.
4. Heat oil in a frying pan over medium heat. Carefully add the sausages to the pan and fry for about 3-4 minutes on each side, or until golden and crispy.
5. Once cooked, remove the sausages from the pan and place them on a plate lined with kitchen paper to absorb any excess oil.
6. Serve your Glamorgan sausages hot, with a side of mashed potatoes, peas, or a fresh salad.
