From Pumpkin Patch to Plate

This October, make the most of pumpkin season with two perfectly seasonal recipes from Forage. Start with our warming Pumpkin, Sage & Goat’s Cheese Soup, followed by a deliciously spiced Sweet Pumpkin Pie. Why not pick your own pumpkins at Forage this October, then head to the farm shop to gather the ingredients and enjoy the best of autumn produce, from pumpkin patch to plate?

Pumpkin & Goat’s Cheese Soup

Serves: 6-8  |  Preparation: 20 minutes  |  Cook Time: 45 minutes

When the days get cooler, nothing beats a bowl of homemade soup. Our pumpkin and goat’s cheese soup combines sweet, earthy pumpkin with the gentle tang of creamy goat’s cheese for a comforting autumn lunch or supper. It’s a simple, seasonal recipe that makes the most of the pumpkins growing here on Penllyn estate farm. Perfect with a chunk of crusty Ty Melin sourdough bread on the side.

Ingredients

1 small Penllyn Estate pumpkin (peeled and diced) 

2 onions (sliced) 

4-5 cloves of garlic 

200g Pant Ys Gawn goat’s cheese  

1tsp liquid sage 

1-2 litre Potts veg stock 

2tbsp Forage rapeseed oil 

Salt and Pepper 

Method

1. Pre-heat oven to 180°C. 

2. Place the diced pumpkin on a baking tray, drizzle with oil and season with salt and pepper. Roast for 30-40 minutes until soft.

3. Sweat the onions and garlic for around 8-10 minutes, add the pumpkin and the veg stock until it’s covered (add water if necessary).  Bring to the boil. 

4. Lightly toast walnuts in a dry pan until golden. 

5. Once boiled, add sage and goats’ cheese and blitz in a food processor.  

6. Season to taste.  

Optional Asian Alternative! 

  • Add chilli and ginger when cooking the onion and garlic. Replace the goat’s cheese for coconut milk!  

Sweet Pumpkin Pie

Serves: 10 – 12  |  Preparation: 30 minutes  |  Cook Time: 1 hour

There’s something wonderfully cosy about pumpkin pie, and October is the perfect time to make one. Made with pumpkins grown right here on our farm, this classic autumn dessert is full of warming spices, creamy pumpkin, and a beautifully crisp pastry crust. Pick up a pumpkin from our farm shop or pick from our pumpkin patch yourselves and bring a little taste of the pumpkin patch into your kitchen.

Ingredients

 

FOR THE PASTRY
225g (8oz) plain flour
115g (4oz) Ty Tangwlyst cold unsalted butter, cubed
1 Penllyn Estate egg yolk
2-3 tablespoons cold water

 

FOR THE FILLING:
450g (1lb) pumpkin puree
2 large eggs
175g (6oz) caster sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
A pinch of salt
250ml (1 cup) Ty Tangwlyst double cream

Method

 

FOR THE PASTRY
1.
In a large mixing bowl, combine the plain flour and cold, diced butter. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs. 
2. Make a well in the centre of the mixture and add the egg yolk. Mix it in with a fork. 
3. Gradually add cold water, one tablespoon at a time, until the mixture comes together to form a dough. Be careful not to add too much water. 
4. Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
5. On a lightly floured surface, roll out the chilled pastry dough into a circle large enough to line a 9-inch (23 cm) pie dish.
6. Carefully line the pie dish with the pastry, pressing it gently into the corners. Trim any excess pastry hanging over the edge. 
7. Blind bake using baking beans for 15 minutes at 180 C.

FOR THE FILLING

Peel and dice a pumpkin, then cook until soft and mash or puree it. 
9. Preheat your oven to 200°C (180°C fan/400°F/Gas Mark 6). 
10. In a large bowl, whisk together the pumpkin puree, eggs, caster sugar, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and a pinch of salt until well combined.
11. Gradually add the double cream to the pumpkin mixture and mix until smooth. 
12. Pour the pumpkin filling into the pastry-lined pie dish. 
13. Place the pie in the preheated oven and bake for 35 minutes at 160°C and continue baking for another 35-40 minutes, or until the filling is set and the pastry is golden brown. 
14. Allow the pumpkin pie to cool completely on a wire rack before serving. Sprinkle over some caster sugar and caramelise using a blow torch. 

Serve with whipped cream or a scoop of vanilla ice cream.
