Smoked Chicken, Bacon & Goats Cheese

Tomato Pasta
Serves: 4 – 6 | Preparation: 5 minutes | Cook Time: 15 minutes
Ingredients
Lilo’s Handmade Garlic & Herb Pasta
2 Black Mountain Smokery Chicken Breasts
3 slices of Penllyn Estate Cured Back Bacon (diced)
1 Jar Mr Organic Mixed Herb Passata Sauce
125g Pant Ys Gawn Goats Cheese
150g The Real Olive Company Wild Garlic & Basil Olives (halved)
2 Tomatoes (quartered)
2 Garlic Gloves (peeled and crushed)
1 Red Onion (peeled and finely diced)
Virgin Olive Oil
Salt and Pepper to season
Method
1. Salt boiling water and add pasta. Follow cooking instructions on the back of the packet for cooking time.
2. Whilst your pasta is cooking, add a splash of oil to a frying pan. Over a medium heat, cook the bacon until crispy.
3. After removing any excess fat from the pan, add your chopped onion and sauté for 2 minutes. Add the garlic, olives and tomatoes and cook for a further 2 minutes.
4. Shred the chicken using two forks and then add to the frying pan along with the tomato sauce. Simmer for 3 minutes.
5. Add half the goat’s cheese into the sauce and mix. Season with salt and pepper.
6. Drain your pasta and return to the saucepan. Add the sauce to the pasta and mix well.
7. Plate the pasta and crumble the remaining goat’s cheese over each dish before serving.
Optional: Remove chicken and bacon to make dish suitable for vegetarians
