Goats Cheese, Beetroot and Balsamic Honey Salad
Serves: 2 | Preparation: 10 minutes | Cook Time: 1 hour
Goats Cheese takes centre stage in our August Recipe of the Month at Forage. A fresh and vibrant salad with earthy beetroot and sweet balsamic honey. Perfect for summer lunches and packed with seasonal flavour.
Ingredients
1/2 a bunch of Beetroot
200g Pant ys Gawn Goats Cheese
2tbsp Penllyn Estate Honey
1tsp Odsey Balsamic
Handful of Walnuts (or alternative)
Lemon Forage Rapeseed Oil
Salad leaves/Gem Lettuce
Method
1. Preheat oven to 200°C.
2. Wrap beets in foil and roast for 1 hour. Cool, peel, and slice.
3. Lightly coat the salad leaved in rapeseed oil
4. Lightly toast walnuts in a dry pan until golden.
5. Layer the salad leaves, beetroot, goat’s cheese and walnuts
6. Drizzle over the honey and balsamic
