A Vineyard Rooted in the Vale of Glamorgan
Liz and Peter planted St Hilary Vineyard in 2019 on a gently sloping one-hectare site. The location offers ideal growing conditions, nestled between an apple orchard and a wildflower meadow.
From the beginning, they chose to follow low-intervention, organic principles. They planted three classic grape varieties: Chardonnay, Pinot Noir and Pinot Meunier. Together, these form the foundation of their wines.
Because of this thoughtful approach, the vineyard works in harmony with its surroundings rather than against them.
A Philosophy of Low Intervention and True Expression
At its core, St Hilary Vineyard aims to produce Welsh wine that reflects its terroir. This includes the environment, soil, climate and natural ecosystem.
Instead of heavily manipulating the process, Liz and Peter allow the fruit to speak for itself. Their winemaker follows the same low-intervention philosophy. Therefore, each vintage captures a genuine expression of the vineyard.
This commitment ensures the wines feel authentic, balanced and deeply connected to place.
Traditional Method Welsh Sparkling Wine
One standout product from St Hilary Vineyard is its Sparkling White Wine. Crafted using the traditional method, this wine uses Chardonnay, Pinot Noir and Pinot Meunier grapes grown on-site.
After harvesting, the grapes undergo spontaneous fermentation using natural yeasts from the vineyard. Then, the wine completes a year-long secondary fermentation in the bottle.
As a result, it develops fine bubbles and a complex flavour profile. The wine has also received Protected Designation of Origin (PDO) status as a Welsh Sparkling Wine, highlighting its quality and provenance.
Limited Production, Exceptional Quality
Only 800 bottles of this sparkling wine were produced. Therefore, it’s a truly limited release.
This small-batch approach allows St Hilary Vineyard to focus on quality at every stage. From handpicking the grapes to careful fermentation, every detail matters.
