Lemon & Clementine Posset
with Limoncello
Serves: 4-6 | Preparation: 10 minutes | Cook Time: 10 minutes | Chill Time: 4 hours or overnight
Lemon Posset is the star of our July Recipe of the Month at Forage – a light and zesty summer dessert made with clementine and a splash of Limoncello for a refreshing citrus twist.

Ingredients
600ml Ty Tanglwyst double cream
150g caster sugar
Zest of 1 lemon
Zest of 1 clementine
60ml fresh lemon juice
(about 2 lemons)
60ml fresh clementine juice
(2–3 clementines)
2 tbsp Nonna Assunta’s Limoncello
(adjust to taste)
Method
1. In a medium saucepan, gently heat the double cream and sugar over medium heat. Stir until the sugar has dissolved, then bring to a gentle boil. Let it boil for 3 minutes.
2. Remove from heat and stir in the lemon juice, clementine juice, zests, and Limoncello. The mixture will slightly thicken as the acid reacts with the cream.
3. Strain to remove the zest and any lumps.
4. Pour into ramekins, glasses, or small serving bowls. Chill for at least 4 hours, or overnight until set serve.
