Beetroot & Broccoli Pasta

Serves: 4  |  Preparation: 10 minutes  |  Cook Time: 1 hour

Ingredients

400g Lilo’s Beetroot Pasta
2 Beetroot
125g Pant Ys Gawn Goats cheese
1 Broccoli
Forage rapeseed oil
2 cloves of Garlic
1 Onion
Salt and pepper to season

Method

1. Boil the beetroot for 1 hour or until the skin easily peels away and is cooked.
2. Peel and dice the onion and garlic. 
3. In a pan, sweat off the onion and garlic with a splash of the rapeseed oil and cook for 8 minutes.
4. Bring salted water to the boil. Add pasta and proceed to cook for 6-8 mins (until pasta is al dente)
5. While the pasta is cooking, cut the broccoli into small florets and boil in salted water for 2 – 3 minutes.
6. Take half the beetroot and blend to make a puree. Take the other half of the beetroot and dice into small cubes.
7. Add the beetroot puree and cooked pasta to the onions and garlic. Mix well. 
8. Season to taste. Finish by sprinkling goat cheese and broccoli over pasta.
